How well do you think it would work for colorizing video?
It'd be in desperate need of temporal modeling. Video is easy as long as there isn't too much color. Otherwise it flickers. I know that sounds harsh on my own work but it's true :P

Are you planning on adding some form of temporal stability? Seems like historical footage/movies would be a good use case for your models, and maybe a good commercial opportunity as well
