Yeah, GPUs are getting powerful each year. I feel dealing with hardware is painful that's why I always prefer cloud solutions. I would say 95% of the research/projects I do are on colab.
Yeah when you get ambitious with the hardware (quad configurations in particular) it can get really tricky. You're talking about having to seriously consider power and bandwidth issues at that point. As well as not shooting yourself in the foot with bottlenecks (memory etc).
It would be helpful if you can make a thread about how you deal with such stuff. Maybe, I will have to deal with them in the future :)
