My big disclaimer here is that my area of expertise is very narrowly in the realm of DeOldify and what it takes to get that running. That being said, my personal bias is that using ML stuff in a useful language that actually runs well on production (not Python) is what you want.

That could be any number of things but C# tops the list in my mind because once you learn that everything else is easy. The alternative answer to your question would be R because that's another machine learning tool but I don't really use it personally so I can't vouch for it.
