There is more than one way to get a BW frame from a color one. The same goes for capturing light from a scene into a bw plate. I suppose this is a source of error. Maybe you should use more than one method to generate the training set (use green, red and blue filters).

Why is always color of the shirt is dark blue?

Well...they didn't exactly wear hypercolor shirts back then..... that's part of it. But the other part is the model just lacks the ability to do a fuller pallet of colors. It's one of the toughest problems believe it or not.
