Well the magic of deep learning is that it figures that stuff out for you to a large extent :) But really it boils down to a combination of- it definitely knows that skies are blue, grass is green and skin is...skin colored.

But other things like clothes- it takes an "educated guess" on those so to speak. It tends to pick out blue but sometimes purple/red/green. The way the training is set up is such that the idea is to "fool" a critic ai.

Yes. I took Imagenet images and simply converted them to gray scale. The job of the generator is to convert that gray scale back to realistic full color, and the critic's job is to know the difference between real and fake and help guide the generator accordingly.
