✋My brain couldn't process this as reality at all. Lots of peculiarities. One for instance is a wheel turned that far to the left would have the truck immediately into the ditch at speed.

Nah. If you zoom in, on the first screenshot I posted, you can see the plane of the front tire. It's definitely turned to far for reality. Here is another shot where you can see oversteering in addition to the rear wheel appearing to be out of plane with the side of the truck.
