What vegetables have y'all changed your mind on? A few years ago, I suddenly liked chickpeas and olives. Now, rapini and Brussels sprouts.
I think when people load cheese on things it means it IS great. (But I am not a fan of eggplant.)

I mean, I am by no means anti-cheese (though... kind of on vegetables, unless they're in like a taco?).

I mean, I rarely will object to adding cheese to any dish outside of dessert.

I just really don't like, e.g., casseroles. Or when the cheese is obscuring the vegetable (vs. salad topping, pizza, etc.).

It's good you don't edit what I do to my food at home.
