Undergrad business majors need to take stats. Most hate it, do poorly, and enter the business world with little understanding of the most basic of statistics fundamentals. Stats for social science sounds great, in practice most would get nothing out of it.

Agree with this. Only replying to add that I don't think a class in statistics is enough to understand statistics. Only applying the discipline with oversight from a legit statistician imparts true appreciation and some understanding of stats. Maybe the same for all disciplines

A big weak area I see is law professors who dabble in empirics amateurishly in law review articles. They don't need any particular undergrad background to become a lawprof, and law reviews don't have peer review - even for empirical pieces. Maybe remedial offerings could help?

Impossible if done with any kind of rigor. That would require multivariate calculus and matrix algebra at the least, which would bar most intended social science majors.
