It's interesting because most people don't even know what an aurochs is anymore. It makes perfect sense to state that aurochs are extinct in between mouthfuls of the flesh of their domesticated descendant.

Meanwhile domestic bison haven't been domesticated long enough to really even look or be named differently from their wild ancestors. They're more just tamed and bred in captivity than fully domesticated I guess
