why are people keener to new movies & TV shows than they are to new iPhones? I’m wondering about a general classification of products, not example-specific reasons.

Sometimes that’s true... like if a projector in the back of the room projects the same thing onto the wall as a new projector. But for iPhones, the actual phone is often a distinctive part of the message you’re looking at, and that part varies between versions (or it tries).
