i wish to state for the record that i have revised my position to knee-jerk trend-humpers being Good Actually because of having vastly expanded the selection and availability of GF foods for people who have celiac disease and gluten allergies

On the gripping hand, it does come with some problems. I don't have any kind of gluten sensitivity myself but apparently a fair amount of supposedly gf stuff isn't, because it's aimed at the people following the fad. Similarly, it's not always taken seriously in restaurants now.
