i wish to state for the record that i have revised my position to knee-jerk trend-humpers being Good Actually because of having vastly expanded the selection and availability of GF foods for people who have celiac disease and gluten allergies

On the gripping hand, it does come with some problems. I don't have any kind of gluten sensitivity myself but apparently a fair amount of supposedly gf stuff isn't, because it's aimed at the people following the fad. Similarly, it's not always taken seriously in restaurants now.

So many things that have no gluten in their ingredients but are processed on the same machinery as wheat-containing things & therefore likely cross-contaminated is huge, hence GF labels on things that "shouldn't" need it. Wheat is in a stupid amount of things it shouldn't be.

Shouldn't it be treated like all other allergens, then, i.e. "CONTAINS: SHRIMP", and not as a marketing slogan? The prevalence of "GLUTEN FREE" labels suggests that anything not labeled such has the wheat death in it. Anyway, good point, this is not the hill I want to die on.
