I mean I get that but it’s also important to consider the impact of a joke even if the intent wasn’t meant to be harmful! People seem to feel like it was punching down a bit.

saying it is a joke doesn't automatically make people not take offence to it. maybe just don't make something that is an accessibility into a joke.

As a disabled person, accessibility can 100% be joked about as can a condition it's how a lot of us cope and find laughter in something that might otherwise cause us pain, disadvantages or makes us feel depressed. Just because you might be offended doesn't mean it's not funny.
