I like this overall, though I feel like I want to point out that this conclusion was basically inevitable from the moment in the first season when the lady was like "you gotta take this kid to the jedi" which at this point is literally just one dude.

Interesting but not sure I totally agree. I think S3 of Mando can easily move past the Luke scene and still be the show Matt wants it to be. Mando taking off his helmet for the child was far more powerful than cgi Luke.

I wish I could let my 12-year-old self know that one day, there'd be so much Star Wars, but that everyone would be disappointed in it in some fashion. Maybe I could've convinced myself not to bother with it.

God, when I was a kid, there was nothing I wanted more than more Star Wars. If you told 12-year-old me that one day there'd be 11 movies (or 14, depending on which you count) and seven TV series, I would've been so excited.
