Octopath Traveler is not (IMO) a good game. And yes, critics sometimes need to review things they dislike, and then actually give those things negative reviews, consistent with their own opinions and perspective. There isn't nearly enough of that. Does that cover everything?

I primarily dislike the lack of any unifying quest, and the way you end up feeling like you have 8 characters on 8 completely separate quests. It totally lacks the interesting relationships between cast members that made the games that inspired it (FFVI etc) so captivating.

Mmm. So kinda like the problem of Saga Frontier? I played the demo of Octo and it kinda felt a little soulless, was my one gripe. Like everyone knew what they were doing to MAKE GOOD JRPG but there was no... fire?

Never played Saga Frontier but yeah, Octopath's problem for me is one of soullessness. Competent JRPG mechanics are commonplace; in and of themselves they don't make a game good, IMO.
