It might b a fact, not a theory. Maybe the official game guide or game manual says so. Which raises the question why Yoshi´s Island is called Yoshi´s Island in the first place.

But it seems like they took the fact from an official Super Mario encyclopedia or wikipedia page?

The person known as Yoshi is shrouded in mystery. A drifter, an unmoored soul, and an inveterate gambler. It is said that she/he won the island in a game of chemin de fer from the equally mysterious Kilroy.

No I agree it’s Yoshi’s Island because the Yoshis live there, isn’t that why it has the possesive plural it’s THIER island?

Yeah a group of the Yoshi species is referred to in plural as Yoshis, but the green dinosaur is named Yoshi and thus "Yoshi's" Island is the possessive of this specific dinosaur's name.

That animal, by pure coincidence, says name of the island that it's named after. Makes total sense.
