What's some good advice for breaking into the games industry and getting junior/intern roles at studios for someone who is self-taught, or who doesn't have a game-related degree?

Degree isn't needed, for artists it's all about portfolio. If you want to be an Environment artist, studios are more interested in environments and in engine work than props.
Can't stress this one enough. Generally props are outsourced or done by senior artists. Environment art (set dressing) is generally what a junior would be doing in a AAA role.

Yeah! I get you! I think I use props mainly as a way to get used to certain ways of working more than anything else (or if there's a cool thing I want to model). Now that a period of practice is over, it's time to apply that stuff to a bigger piece!
