How do we know it's a deer and not a sheep?
Good question! I'm merely reporting the description, don't have enough knowledge of prints etc to discriminate, I'm afraid... :/
It is a beautiful print. I have lots similar in the Silchester collection. For info, a sheep print would be asymmetrical with rounded toes whilst deer prints are symmetrical with pointed toes.

I sadly don't have a better shot of the tile to test this again... It looks a bit deer-ish to me based on this,but could be the eye of faith!?
