As example, we can use Starcraft and Age of Empires 2 remastereds for OG expirience and renewed expirience respectively. (I prefer the later, since knowing that SC remastered has the old stupid pathfinding AI was a disapointment)
I'd prefer re-building it in a new engine with the gameplay limitations of the past. The reasoning - respect for what came before. If the developers want to make a new game, they should just make a new game.
