People learn music theory so they can know when to break the rules. Does that apply to programming language theory too?

I would say so, yes. But like with any field there is always a danger of getting entrenched into the status quo and becoming blinkered from alternative possibilities if you go too deep.
There's tremendous value to be mined from the current theory, but stay weird! That's part of why I really enjoyed 's talk on concatenative languages as an alternative basis for programming languages:
