I am writing some notes in which theorems, definitions, examples and exercises have lightly colored backgrounds. What colors does your subconsciousness assign to these? Is a theorem yellow, green, or blue? How about an exercise?

You can find examples of colour-blind-friendly colour palettes. I suggest that you pick one of those.

Do you know of a site that maps my colors to "what color blind people would see"?

There are even tools that you can get to simulate different forms of colour blindness on actual designs (rather than just testing colour palettes). It's been a while since I did design work so I'm not sure what the popular ones are at the moment.

colororacle.org looks promising (I think I remember using it back in the day) - but there are probably ones where you can upload images to test.
