It always surprises me when people say that dynamically typed programming is easier for anything but quick scripting. In particular, dynamic types mean that I have to track a lot of information myself, whereas I can forget that information with static types

Yeah I feel the same! It's really hard for me to keep all the stuff in my head at once. I think some people use really strict TDD for dealing with this but I struggle to keep that discipline. Type systems are a big help for me in that regard.

Feedback from a type checker is also much better than from tests, it comes much more quickly, is more rigourous and doesn't require additional maintenance. Pretty much any test you can offload to the type system, you should.
