They can be expensive, but black magic design makes great capture gear.

They also make standalone devices with dedicated screens and HDMI passthrough. ~$500 but worth the cost I think if you do a lot of capture

If you go that route be prepared for large video files though. Black Magic's use ProRes video codec and you'll want to use at least ProRes LT for retro games, otherwise the compression is rough.
