I've seen some writers complain that they can't 'world-build enough' due to the constraints of their marketing category limiting them to 300-350 pages (rather than 500-600), and my assessment is that they're simply bad writers.

Thanks, now I have to remember the absolute horror of a first draft I saw that was 250k words long. Never again shall I blithely say "sure, I'll look at your draft" to someone.

As someone that gravitated towards long ass books and series I want you to be wrong, but so much of it is bloat. If anyone knows any good giantess books/series that uses it well please let me know

Not saying you couldn't tell Coiling Dragon in less than 2m words, but there is a valid 'style' there that impatient people wont like. Something like Legendary Moonlight Sculptor is a nice 2 weeks of emptying your brain.
