My other issue is that a lot of its proponents treat things as extremes: media is either 'hopepunk' or it's incel grimdark, there's nothing between, so if you say you don't care for 'hopepunk' they start ranting that you're a bitter bitch who hates nice kind goodness or whatever.

Anyone using the term "hopepunk" is probably not super media literate tbh. The lists I've seen of "hopepunk" media seem awfully similar to lists of stuff that got popular on Tumblr regardless of their content.
