Is there a reason why everyone doesn't just run git on their own VPS? Is it inherently risky/dangerous/time-consuming?

the costs are low enough, and the inconveniences are high enough. Add issue tracking, permission management, etc.

There are tradeoffs: being on the hook for uptime, backups, updates, scalability. Hosts also usually add some nice features.
