For anyone who has retired parents, what are some good examples of cognitively challenging and open ended projects you've seen them or their friends take on? E.g. writing a book or blog (not looking for something close ended like Sudoku or crossword puzzles)

Not easily reproducible but my grandparents ran a tree farm for 20+ years in retirement haha Grandfather passed away this year year but was still actively maintaining it at 95 years old still
