This is the one way I tried and it worked great locally on my network, but I couldn't figure out how to make it work once I was at the office? I feel like the problem was the IP address I was using was the local IP and couldn't find an IP that would work remotely.

Splashtop!! https://www.splashtop.com/ I do the opposite. Windows PC with me, and I have a Mac Mini at home. I use Splashtop to connect to my Mac for iOS builds and such. I need to leave it to never sleep, but I don't mind. It's paid but IMO well worth it for the lack of hassle.

What's nice is that I can access my Mac on my home network via the app on my PC, phone, or iPad. It also supports file transfers, syncing the clipboard, etc. When I run in fullscreen it almost feels like I'm on a Macbook. I really like it.
