I partially agree. This is a great v1.0 tactic but there should be at least an outline on how to migrate to a more decentralized option in the future

Totally agree! There are efficiencies to developing using a centralized infrastructure. Sure, you can run your own nodes but ensuring uptime/reliability on a home network is a pain. On an EC2 sure, but infura just makes things easier imo.
