my mother is severely disabled and most days can't cook for herself. she'd starve to death. my veganism is about ethical treatment of people, animals or not, and letting my mother die is not compatible with that

Except that bacon is extremely unhealthy and you're effectively contributing to a shorter and lower quality lifespan. If anything you are morally obligated to force to change her diet. Force feeding her if necessary.

no, my mother has individual rights and bodily autonomy. i will not force feed her. i've cooked many vegan meals for her that she doesn't like, and tell her regularly the benefits of being vegan. force feeding a person is a crime much worse than buying meat.
