Using a Cronometer or a similar app can help since it gives you a breakdown of the nutrients and the percentage of RDA in the food you eat. I like to use 80:10:10 macronutrient ratio, figure out my protein needs @ my activity level and determine my caloric needs from that.

thanks for the details - do you eat mostly raw? that's the context i have for the 80:10:10 ratio (besides a long lost lifetime ago doing dry matter and ration balancing equations at uni)
