Does overleaf offer similar collaborative features as google-docs. I imagine it would need version control and integration w/ git. Imagine being able to collaborate real-time on a latex documents.

Overleaf does offer this, although in my experience it's been a bit clunky as an interface.

No, but you can use a latek equation generator, convert those into PDFs and then insert the PDFs. Obviously clunky, but similar to inline latek equations in appearance.
