I also am not familiar with them but my friend plays them and they have some slide / jump into salto move and he always breaks the horns with it. But tbh i haven't completely understood what can break / cut what. Felt like i broke horns with longsword although it makes no sense.
Depends on the weapon type, some can do both blunt and severing and some things are just easier with a certain type. Breaking Diablos horns with a Hammer is stupid easy, can do it with Switch Axe but takes way longer.
