I honestly find a lot of comfort in knowing that the majority of South American foodways aren't even known about by most writers in the US.

Not that it's better or worse, but indigenous peoples from the South America never had treaties to sign. Lots of consequences for food tbh.

Anyway. We have so many foods and they're so amazing and I feel so guarded about them and wish I didn't but I read food writing so... yeah.
