Where I live it's hard because hills. By the time sun is down the hills obscure the planet. Mercury is always close to the sun.

Should be possible but Mercury is often hard to spot b/c sun (caution!) An app can help w viewing times.

Yeah. Mercury is best spotted just before sunrise or just after sunset (sun below horizon)

You can! Also Venus and Mars, all depending on time of year. The Starwalk app is great.
