I just saw someone get chopped on Chopped bc they "overcooked" their meat. Yet every black/latinx/native person I know eats meat like this.

Most of the cow is tougher muscles, so even in European culture only wealthier people would get meat that is tender when rare.

The rest of us had to learn the art of cooking—making something delicious from something no noble would touch.

And those well-done cuts are as juicy and tender as you say, if the person at the stove or fire really knows how to cook.

Tougher muscles require longer cooking over lower heat to make them tender. My Czech ancestors smoked them or made sausage.
