I just saw someone get chopped on Chopped bc they "overcooked" their meat. Yet every black/latinx/native person I know eats meat like this.

Point is there IS a tradition of cooking beef in SA countries that are big consumers of xclnt quality beef. -
Note: grassfed beef is well marbled, that means it can withstand a bit more cooking without drying out.
