I just saw someone get chopped on Chopped bc they "overcooked" their meat. Yet every black/latinx/native person I know eats meat like this.

I feel like a pariah asking for a well-done steak or a well-done burger at a restaurant. It's GROUND MEAT for gawd's sake how sacred is it?

i hear you but I think it's hard to compare taco meat to churrascaria to steaks - they're all very different cooking methods

It like an Argentina steak is still well-done compared to a US steak, which typically isn't.

we don't eat bloody meat in Argentina, period. It has to be perfectly done and juicy.

the best steak I've ever had was at an Argentinian steakhouse in SF years ago. It was sublime -
not just juicy but ridiculously tender. I've had nothing like it since.

perfectly done with a dash of coarse salt (sal parrillera) at the end. Sometimes I enjoy chimichurri on it.

what cut was it? Certain cuts of meat hold up to higher temps than others. Usually bc of fat/protein content.

I like that you're bringing this up, bc white folk do overhype rare meat but there's way more nuance than over vs under done

Some cuisines have made delicacies over the less attractive cuts, but that doesn't make for good 30 minute cooking challenges
