You used one rib and the whole head of celery is still in the fridge? Cut them long, add a bit of oil, salt, and pepper. Roast 30 mins. Mmm.
It REALLY brings out the sweetness. Tastes like a completely different vegetable! It's pretty much my fav for roasting. @Jon_Segal

Not that you asked but... I cut them in half, add oil, salt and pepper and place them on top of an already hot cookie sheet.
