Overdid it a bit on the pepper so it overpowered most of the other tastes but other than that it was hearty and warm. Will definitely be making more of it during the winter months.

I use an instant pot so not much of a recipe really
Just saute the chicken, add in the veg and rice, a couple of cups of water, some stock and pepper, and set to cook on max pressure for 8-10 mins. After that just simmer and stir in some more pepper to taste.
