I'd be a farmer NPC whose crops you can steal. I'd then buy back those crops from the player and basically pay for my own work.

I would be an NPC with the dialogue text saying "Hi Guys" because apparently in Asia people call me the "Hi Guys, guy" :p

I am the Beekeeper who sells the honey for a cooking quest, while grumbling about people running around and disturbing the bees. As of patch 2.3, I also sell a salve to cure bee stings.

My character would be Malrone, she would be a tailor and her dialogue would be 'Welcome, welcome. take a look, my friend.' Why? Because that's what she always was, a tailor! Ezra would be a tinker and his dialogue would be: If it is able to explode, I can make it worse!

The rogue trainer, who never moves from the class hall. I'll teach you how to rogue without ever having to do any of the actually sneaky work. Ow and I sell replacement Tools that are mandatory for lockpicking, but always break after a couple uses so I've a steady income

A chef! The idea of working with all the natural and wild ingredients sounds challenging. I would rewards adventurers that bring me ingredients with a hot bowl of stew.
