I used to think I didn’t like barbecue sauce because most commercially available sauces are “Kansas City style” which is basically just melted sugar. Then I started making my own sauce and realized from reading recipes that the dominant flavor doesn’t HAVE to be sweet.

And just in general learning to cook and thinking “wait, why is this recipe asking me to add... HALF A CUP OF SUGAR??” when it already has plenty of natural sugar from things like onions and tomatoes. I got used to just ignoring sugar in recipes.
