Hmm that's true. I'm wondering if only doing it for like 5 mins would mean it wouldnt absorb too much of the flavor though? Or maybe only do this if you're going to season the meat with something way stronger

Way stronger, so no point needing a 5 minute defrost cause you'd be baasting it anyways.
