People who work the brunch shift are home in time to tuck in their kids. Kinda a rarity in service jobs. Everyone I knew coveted that shift.

You know what would actually be a labor thing for restaurants, would be instituting a curfew
Making everything close at 9 pm to try to eliminate 3rd-shift workers in the service industry
So poor people don't get pressured into working jobs that kill normal family life
