I've just learned the Washington Monument uses no mortar and the stones are held together by gravity and friction alone and my mind is blown.

Yeah, friction-fitting is actually more stable over the long term if you do it right. Mortar is, definitionally, *softer* than the stone it's gluing together, and it degrades over time.
