I learned the fact that "rapunzel" is a kind of lettuce very early on and knowing it has only alienated me from everyone I try to joke with about it

Not actually lettuce, but a salad green, yes. One of two! (One of the two is colloquially called "lamb's lettuce" but it's not related to actual lettuces.)

I had no idea she was named after radishes/salad greens. But that’s what her mother was craving (depending on which version), and what her father took from the witches garden, so it makes total sense in that way that fairy tales make no sense at all.

The witch names her, as a cruel taunt she doesn't understand (her original parents traded her away for a vegetable, so that's all she's worth)

Oh, that makes total sense, that the witch was being an asshole! I remember reading some analysis once about how there are signifiers that the husband had been infertile, and the vegetable being a metaphor for overcoming that, so my brain thought hey maybe her parents named her
