We see them again in Prisoner of Azkaban, when Dumbledore hires "security trolls" to beef up Hogwarts' defenses when the Dementor guards aren't enough to keep Sirius Black from entering school grounds the first time In general wizards seem to use them as dumb muscle
-
In Goblet of Fire there's a part where they talk about what a legend Mad-Eye Moody is and how he's learned to speak the languages of all the nonhuman races and Ron sneers that to "speak Troll" you just have to "point and grunt" Lovely

I both believe you’re correct that trolls are sentient, and also that Rowling forgot or couldn’t comprehend that she had written them that way and that it would have consequences when they died.

The first book was a very PG-rated children's book and there's no onscreen deaths until Quirrell's, not even of the troll
