      I mean the *total amount* of uncooked and possibly infectious meat you're consuming is probably lower with a rare hamburger than a raw one but so what really Those restaurant burgers are often pretty big patties

      Yeah but also the time between grinding and cooking. If you grind the beef right before you cook it it’s a lot safer than something that sat in a supermarket for days

      That's a much more detailed / accurate version of what I meant! If you grind up steak then and there there shouldn't be much more risk than rare steak, but if it's from a packet I'd want it cooked through

      The risk is always unavoidably there, because you can't control what bacteria lands on the surface of the meat and starts growing there before you start eating it (especially if you can't control the slaughter process)

          But yes rare steak is safe -- where other meats aren't -- because beef is dense and it takes a long time for bacteria to penetrate much past the surface (This fact is why dry-aging steak is safe when done properly)
