I’d swear I read somewhere that it was actually the other way around - that cheese and yogurt were attempts to work around lactose intolerance? (My lactose intolerant kid can have yogurt & cheese, but not milk or ice cream.)

I don't know that cheese and yogurt started as conscious attempts to do anything -- they kind of happen on their own in the absence of modern pasteurization and refrigeration But certainly people noticed that milk that's undergone certain forms of aging go down easier
