The "beer before liquor, never been sicker, liquor before beer, you're all clear" aphorism seems to be about the idea that getting drunk on beer "sneaks up" on you and you find it harder to judge your intoxication level than how doing a shot hits you "all at once"

This... may be true, I wouldn't know It probably only applies to people who start drinking with the intention of stopping at some point

As someone who also didn't start drinking until later in life, I'm curious if you have anything to say on the subject of addiction and recovery.

For myself, habits begun in adulthood are much more amenable to change than those that have persisted since adolescence. But there's some selection bias there, as the habits of youth that were easily changed obviously didn't persist.

I'm the opposite. I used to drink hard liquor. Now I stick to beer and wine because it takes so much longer to get to the point of regret. I'm far more temperate on beer.

I turned 21 in 1995 and my impression of beer was whatever they put in kegs. I wasn’t that into it, and was more a cocktail, hard liquor person until I traveled to Europe.
